Lo volvemos a volcar en la sartén y le añadimos un poco de sal, una pizca de pimienta molida negra y dos cucharadas de azúcar para quitar la acidez. Pare la máquina y agregue los tomates y la sal y programe dos minutos a velocidades 5-7-9 progresivo. El tiempo dependerá de la calidad de los tomates. Cuando estén bien triturados, añada el pan y el vinagre y mezcle durante 20 segundos a velocidad 6-8. Incline ligeramente el cubilete y deje caer el aceite por el vaso, poco a poco hasta que se termine de incorporar todos el aceite.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="color:#000000;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="color:#000000;"&gt;Por último, vierta el salmorejo en una fuente o cuencos individuales e introdúzcala en el frigorífico, hasta el momento de servir. Colocar las setas sobre la fuente y pintarlas con el majado. Se pueden ir disponiendo en un escurridor de verduras y cada dos capas, conviene sazonarlas con sal ya que ayudan a que liberen el agua que contienen y, por tanto, su posible amargor. Reservar. Picar la cebolla y los dientes de ajo finamente. Removemos todo muy bien y reservamos.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Deshojamos la endivia, lavamos las hojas muy bien y las secamos con un paño de cocina limpio. Ahora vamos rellenando con la mezcla anterior las hojas de endivias y las vamos colocando en una fuente. Volcar la ensaladilla en una fuente o ensaladera. En un bol echamos las gambas cocidas, lechuga picada, maíz, bocas de mar picadas y mahonesa. Lo movemos todo bien y vamos rellenando los tomates. Se va moviendo y cuando empiece a hervir se retira del fuego.
